- 4 6-ounce salmon fillet
- 3 tablespoons olive oil
- 1 large red onion (diced)
- 1 tablespoon garlic (minced)
- 2 tomatoes (diced)
- 2 sprigs fresh cilantro (chopped)
- 2 mangos (peeled, seeded and diced)
Preheat the oven broiler, Spray a baking pan with nonstick cooking spray. Season the salmon fillets with seasoning salt. Place the fillets on the baking pan and broil the fillets for approximately 15 minutes or until they flake easily with a fork. In a medium saucepan heat the olive oil over medium heat. Sauté the onion until tender. Add the garlic, cilantro and tomatoes. Cook for approximately 2 to 3 minutes or until heated through. Remove from the heat and add the mangos. Spoon the salsa over the salmon fillets before serving.
