• 1/2 c. Mayonnaise
  • 2 tbsp. Lemon Juice
  • 1 Egg, separated
  • 2 lbs. Salmon fillet or steaks
  • Paprika
Mix together mayonnaise, lemon juice, and egg yolk.  Beat egg white until stiff, and fold in.  Place Salmon fillet on piece of heavy paper or foil.  Cut out paper around fish.  (Paper keeps the Salmon skin from sticking to the broiler pan.)  Grill Salmon until fish flakes easily.  Swirl top with the mayonnaise mask, then sprinkle with paprika.  Broil for 2 minutes under high heat.  Serve at once.
Makes 4-6 servings.
