• 1 lb Can of Salmon
  • 3 tbsp. Butter
  • 3 tbsp. Flour
  • 1-1/2 c. Milk
  • 1/2 tsp. Salt
  • 1/2 tsp. Pepper
  • 3 Eggs, separated

Make a white sauce with the butter, flour and milk; add seasonings and pour over egg yolks.  Add the Salmon which has been boned, flaked and drained.  Fold in stiffly beaten egg whites and turn into a greased 4-cup baking dish.  Place in a pan of hot water and bake until set — about 45-60 minutes at 350°F.
