• 2 TBS Butter
  • 1 small sweet onion
  • 3-4 garlic gloves
  • ½ tsp. Curry powder
  • 2 TBS flour
  • 1 1/2 cup mild white Cheddar cheese
  • 1 cup milk
  • ½ tsp black pepper
  • 4-5 boiled potatoes
  • Variety of fish & shell fish:  Halibut, salmon (smoked), cod, crab, shrimp, scallops

(The beautiful thing about this pie is adding pieces and chunks of leftover fish that has already been cooked)

Melt butter in a saucepan.  Add onion and garlic.  Sauté for 5-7 minutes.  Stir in curry powder.  Cook for 30 seconds.  Stir in flour, cheese and milk, stirring constantly until mixture boils and thickens.  Remove from heat.  Add your variety of cooked fish!

Boil potatoes.  Mash potatoes adding butter and milk for consistency.  (I like slightly lumpy mashed potatoes)

Pour mixture into casserole dish, adding mashed potato over the mixture. Sprinkle some cheese on the potatoes.  Bake for 45 minutes at 350 degrees.  Let your pie settle for about 10 minutes before serving.   Serves 4-6 people
